When we were tasting the harvest at Carmo Coffees, Danilo Lodi (Untold) and Phelippe Nascimento (Carmo) agreed that this SL28 is a hidden gem that people are not giving enough attention. It has a distinct sweet lime note, but at the same time a citric AND tartaric acidity. The pineapple sweetness is incredible and when the coffee cools down, lemongrass start to showing up giving more complexity to the cup. Another coffee to challenge people about their perception of what Brazilian Coffees can be!

About The Farmer & Farm

Bringing coffees from distant regions of the world together to generate a new profile of Brazilian coffee is no simple task. And yet, this sanctuary farm project is exactly what Luiz Paulo set out to achieve in 2015 when he founded Santuário Sul.

The wide variety of coffees grown here are a reflection of the obstinacy of Luiz Paulo and his partners. Today, in addition to the traditional Brazilian varietals (like yellow bourbon), the farm produces more than 30 exotic coffees through differentiated cultivation practices (such as shade plantation) and innovative processes used to develop new flavors.

Santuário Sul is situated next to one of the most traditional farms in the Carmo de Minas region, Sisters Pereira, which has benefitted both farms. All of the varietals grown are monitored closely to ensure best possible results within the climatic conditions of the region. In addition, Luiz Paulo himselfs makes sure to always taste the forest samples of each coffee.

“The goal is always to be at the forefront of the market and offer more and more quality,” Luiz says. So far, Fazenda Santuário Sul has acquired some special positions in the international coffee market, and has been recognized globally for the quality of the coffee it produces.
