The Altieri family has been producing coffees for the past 15 years and this Geisha Natural from Boquete was produced in one of the highest part of their MIMIM Estates farm. Because of the elevation, the low temperature of the region and the natural process, this coffee has a very high fruity sweetness like riped peaches, a tartaric acidity like raspberries with a velvety body like white grapes.

When a coffee is so complex like the Altieri Geisha Natural there are multiple directions that I can go with the roast. But this time I decided to work with a fast roast but with a longer developing time in a way that expresses the dominant peach notes, keeps the raspberry tartaric acidity, and gives a round velvety medium body. This coffee is definitely a versatile coffee to make in any brew method you like, even espresso.
